Chef Michel Nischan of Heartbeat W New York - Biography

When restaurateur Drew Nieporent had to find a chef for Heartbeat who had a keen awareness of nature and well-being, he didn't have to look very far. Michel Nischan was already the Corporate Consulting Chef for Nieporent's Myriad Restaurant Group, and Drew knew Nischan had an innate ability to turn natural, whole foods into something healthful and flavorful. That’s because Nischan was an advocate of sustainability well before it became the buzz word it is today.



Nischan credits his respect for nature to his mother, who, in order to feed her depression-era family of thirteen, turned to the family farm. She passed her ideas of cooking, farming, and deep respect for the earth's bounty onto her son, who began his career in the kitchen as a breakfast cook in a rural area near the Wisconsin- Illinois border. He took his love of the land to the Windy City, working in some of Chicago's top restaurants, including La Tour in the Park Hyatt and Jovan Troyevic's prestigious Le Perroquet. Michel Nischan is an American chef. A four-time James Beard Foundation Award winner, he is the cofounder and chairman of Wholesome Wave, Founder and President of Wholesome Wave, Co-Founder of the James Beard Foundation Chefs Boot Camp for Policy & Change along with Chefs Action Network, as well as Founder and Partner with actor Paul Newman of the former Dressing Room Restaurant.

Wholesome Wave was founded in 2007 by Nischan, along with friends Michael Batterberry, and Gus Schumacher as founding Board Chair. It was founded with funding from Newman’s Own Foundation and the Betsy and Jesse Fink Foundation,[1] and supported in part by funding from Grow for Good, a philanthropic initiative of FOOD & WINE Magazine.[2]
